Whole wheat spaghetti & tomato sauce (Feb 7, 2010)

It's Sunday, so it's my (Janet's) turn to cook.

I made a very healthy vegetable lasagna with a side of steamed green beans.  The lasagna was made with whole wheat pasta, low sodium tomato sauce, mushrooms, spinach, zucchini, fat free ricotta and reduced fat mozzarella.  There really should be a limit to how far you go with the low fat, reduced fat, fat free products.  The fat free ricotta consistency didn't look so good - I should have just gotten the part skim...anything but fat free.  There's something kind of strange about fat free...I should have known better - lesson learned.







And for dessert....
These ice cream sandwiches are actually pretty good!


Pizza (Feb 7, 2010)

We went to J&N's house for dinner on Saturday. J made delicious handmade pizza...

And I mean handmade!

Did I say pizza?  I mean pizzas!  (Pizze for any Italian speakers reading this).


I made a salad.

 

And for dessert there was apple tart with vanilla ice cream AND fresh whipped cream AND chocolate shavings.

Chicken Sujebe (Feb 5, 2010)

We had a very yummy Korean meal.  Ethan made Chicken Sujebe which is basically a chicken soup with torn noodles (homemade of course).  It included a combination of homemade chicken and anchovy stock and dried seaweed. I added a little red pepper paste and soy sauce to mine just to add a bit of spice.

We also had three different kinds of ban chan: kimchi, gaji namool (seasoned eggplant), ojinguh moochim (dried squid):

What a great night for a big bowl of Lamb Chili, especially since we're expecting some snow tonight.  In Ethan's magical way of just making ingredients come together, he just whipped this up on his own - no recipe for this chef!

What's chili without a little jicama?  Not that it necessarily goes with chili, but jicama is great, I could eat this with anything!  If you've never tried jicama, you really should give it a try.  Ethan usually just peels it and slices it in little strips.  Its especially good in the summer since it's so fresh and crunchy to just snack on.
